Calling All Recipes!

Readers, I need you again! It has been far too long, and I have ignored, completely ignored my beef recipes section of this blog! Forgive me! I know that there are countless amazing recipes resting in the hands of your favorite grandma, your mom, and even YOU! Surely you have tackled the best cooking tool there is on the face of this planet--BEEF! If not, why don't you head on over to Beef It's What's For Dinner?

Sorry but I'm a vegetarian...

I'm not a vegetarin. THANK GOD!!!! Here is an awesome way to use leftover roast beef and it's easy to make too.

Mexicali Roast Beef

5 of 6 cups of leftover cooked roast beef
15 oz can of Hormel Chili without beans
6 oz of salsa
1 small finely chopped onion
3 oz can of chopped black olives (drained)
3 oz pkg of cream cheese
3 cups of Monterey Jack and Cheaddar Cheese (grated together)

Directions:

Separate roast beef into bite size pieces. Spread into bottom of 13x9 inch greased baking dish. Mix chili, onion, olives, salsa, and cream cheese together. (food processor works well for this) Mix with roast beef and spread into dish. Top with grated cheese. Bake at 325 F for 20 minutes or until cheese bubbles. Serve in warm flour tortillas. Enjoy!!!
